Italian-style Crispy Fried Egg on a Garlic Challah Toast!

Ingredients:

1 egg
4-5 cherry tomatoes - cut into halves
2-3 garlic cloves- chopped
2 tbsp. fresh basil- chopped
salt & pepper
3 tbsp. olive oil
1 slice challah bread- toasted
1 tbsp. ricotta cheese

Instructions:

1. Heat a pan with olive oil over medium-high heat.
2. Add garlic and saute for 30 seconds.
3. Add the cherry tomatoes and toss for 2-3 minutes.
4. Add basil and cook for another 30 seconds.
5. Crack the egg into the pan, and add salt and pepper. Cook for 3 minutes, or until white is set.
6. While the egg is cooking, lightly toast the bread. Then, spread ricotta out over the challah toast
7. Place the fried egg and the garlic-tomatoes & basil mix on top.
8. Drizzle with olive oil
