Roasted Onion Hummus
Servings: 2 medium-sized bowls
Ingredients:
For the Hummus:
2 yellow onions
1 can Garbanzo Beans
2-3 garlic cloves
2 tbsp. lemon juice
2 ice cubes
¾ cup raw tahini
1 tbsp. olive oil
1 teaspoon Kosher salt
Water, as needed
For the Spicy Chickpeas:
1 can Garbanzo Beans
¼ cup olive oil
4 garlic cloves
1 tbsp. paprika
1 teaspoon cumin
Salt & pepper
For the topping and serving:
2 pitas
1 tbsp. fresh parsley chopped
Instructions:
To roast the onions:
1. Preheat your oven to 400°F (200°C).
2. Peel the onions. Arrange the onions on a baking sheet, drizzle with olive oil, and toss to ensure they're fully coated.
3. Roast them in the preheated oven for about 30-40 minutes, or until they're caramelized and soft. Once roasted, allow them to cool.
Meanwhile, make the spicy chickpeas:
1. Drain and rinse the garbanzo beans (chickpeas) under cold water until the water runs clear.
2. Peel and finely mince the garlic cloves.
3. In a medium-sized saucepan, heat the olive oil over medium heat. Once the oil is hot, add the minced garlic. Cook until the garlic becomes fragrant and lightly golden, about 30-60 seconds.
4. Stir in the paprika and cumin. Let these spices cook with the garlic for about 1 minute.
5. Add the rinsed chickpeas to the pan, season with salt and pepper, and stir well to ensure they're thoroughly coated with the garlic and spice mixture.
6. Lower the heat to medium-low and let the chickpeas cook for about 30-45 minutes, stirring occasionally to prevent them from sticking to the saucepan. If they start to look dry, you can add a few tablespoons of water.
To make the hummus:
1. Drain and rinse the garbanzo beans (chickpeas) under cold water.
2. In a food processor, combine the cooled roasted onions, drained chickpeas, peeled garlic cloves, lemon juice, ice cubes, tahini, olive oil, and kosher salt.
3. Process the mixture until it starts to become smooth. If the hummus is too thick, add water one tablespoon at a time until you reach your desired consistency.
4. Taste and adjust the seasoning if needed.
To assemble:
1. Place the hummus on a plate, then top with the spicy chickpeas.
2. Drizzle over additional olive oil and finish with chopped parsley.
3. Serve with pita bread for dipping.
