Maple & Walnut Bread

Ingredients:

3 XL eggs (or 4 L eggs)

1 teaspoon vanilla extract

¾ cup sugar

½ cup vegetable oil

1 tbsp. sour cream

¾ cup coconut milk (can substitute with orange juice)

1 cup + 1 tbsp. all-purpose flour

2 teaspoons baking powder

A pinch of salt

¾ cup raw walnuts, chopped

¾ cup maple syrup

Instructions:

 1.⁠ ⁠Line a loaf baking pan with parchment paper.

 2.⁠ ⁠Preheat oven to 356°F.

 3.⁠ ⁠In a large bowl, whisk together eggs, vanilla extract, sugar, oil, and salt.

 4.⁠ ⁠Add flour, baking powder, sour cream, and coconut milk to the mixture. Mix well.

 5.⁠ ⁠Pour the mixture into the prepared loaf pan and bake in the oven for 13 minutes.

 6.⁠ ⁠Gently open the oven and sprinkle the chopped walnuts on top of the bread. Close the oven and continue baking for another 30 minutes or until a toothpick inserted into the center comes out clean.

 7.⁠ ⁠Once done, gently loosen the sides of the bread with a knife. Use a fork or toothpick to make small holes throughout the bread.

 8.⁠ ⁠Drizzle maple syrup over the top of the bread.

 9.⁠ ⁠Allow the bread to cool for 15-20 minutes before serving.
