Maple & Walnut Bread
Ingredients:
3 XL eggs (or 4 L eggs)
1 teaspoon vanilla extract
¾ cup sugar
½ cup vegetable oil
1 tbsp. sour cream
¾ cup coconut milk (can substitute with orange juice)
1 cup + 1 tbsp. all-purpose flour
2 teaspoons baking powder
A pinch of salt
¾ cup raw walnuts, chopped
¾ cup maple syrup
Instructions:
1. Line a loaf baking pan with parchment paper.
2. Preheat oven to 356°F.
3. In a large bowl, whisk together eggs, vanilla extract, sugar, oil, and salt.
4. Add flour, baking powder, sour cream, and coconut milk to the mixture. Mix well.
5. Pour the mixture into the prepared loaf pan and bake in the oven for 13 minutes.
6. Gently open the oven and sprinkle the chopped walnuts on top of the bread. Close the oven and continue baking for another 30 minutes or until a toothpick inserted into the center comes out clean.
7. Once done, gently loosen the sides of the bread with a knife. Use a fork or toothpick to make small holes throughout the bread.
8. Drizzle maple syrup over the top of the bread.
9. Allow the bread to cool for 15-20 minutes before serving.
