Crispy Cheesy Potatoes
The recipe is for approximately 3 servings
Ingredients:
8-10 baby yellow potatoes
3 tbsp. unsalted butter - melted
2 tbsp. olive oil
Flaky sea salt, to taste
1 tsp. ground black pepper
1 cup freshly grated Parmesan cheese
For the spicy mayo:
2 tbsp. mayonnaise
1/2 tbsp. hot chili sauce (like Sriracha)
Instructions:
1. Preheat your oven to 400°F.
2. Cut the potatoes in half and place them in a large bowl.
3. Add the melted butter, olive oil, Cheesoning, a pinch of flaky sea salt, and black pepper to the bowl. Stir well to coat the potatoes.
4. Spread the grated Parmesan cheese evenly across the bottom of a baking dish.
5. Arrange the potatoes on top of the Parmesan cheese, making sure the cut sides of the potatoes are touching the cheese.
6. Brush the potatoes with any remaining butter and olive oil mixture.
7. Bake for approximately 50 minutes.
8. Once done, remove from the oven and let cool for a few minutes.
9. While the potatoes are cooling, make the sauce. Mix the mayonnaise and hot chili sauce until well combined.
10. Gently flip the potatoes so they're upside-down, and separate them.
11. Sprinkle with additional flaky sea salt to taste and serve.
