Spicy Basil Rigatoni
Ingredients:
350 g rigatoni
¼ cup fresh oregano
½ cup fresh basil
50 g Parmesan cheese
3-6 Garlic cloves - minced
2 tbsp. chili flakes
2 tbsp. tomato paste
350 ml heavy cream
Olive oil
Salt & Pepper
Serve with Parmesan cheese and chili flakes
*Instructions*
1. Cook the pasta in a pot of boiling salted water according to the package instructions, then drain, reserving a cupful of the cooking water.
2. Meanwhile, finely chop the basil and oregano.
3. Sizzle the garlic over medium-high heat with olive oil and add the oregano and basil. Sizzle for one minute, then add tomato paste and chili flakes then cook for 30 seconds.
4. Add heavy cream and cook for another 2 minutes. Add rigatoni, pasta water, salt parmesan, and mix.
5. Mix over medium heat for about 3 minutes or until you get a smooth and creamy texture.
