One-Pot Tomato & Garlic Macaroni

Ingredients:

1 cup Macaroni

½ cup Heavy Cream (or Coconut Milk)

1 tbsp. Chili Oil (reduce amount if you prefer less spice)

1 cup Water

¼ cup Fresh Basil, chopped

1 ½ cups Cherry Tomatoes

10 Garlic Cloves, minced

2 tbsp Sun-Dried Tomatoes, chopped

2 tbsp Olive Oil

Salt & Black Pepper, to taste

¼ cup Parmesan Cheese, grated

For Serving:

1 tbsp Chives, chopped

Extra Parmesan Cheese, grated or sliced

Chili flakes (optional)

Instructions:

1. Heat olive oil in a medium saucepan over medium-high heat. Add minced garlic and sauté for 30-60 seconds.

2. Add cherry tomatoes, salt, and black pepper. Cook until the tomatoes soften slightly, then gently press them to release their juices. Stir in the chili oil.

3. Add the macaroni and mix well. Sauté for about 1 minute.

4. Pour in water, stirring constantly. Cook until the sauce thickens, stirring occasionally.

5. Lower the heat and add heavy cream. Cook for 8-15 minutes or until the pasta is fully cooked, adding more water or cream if needed.

6. Reduce heat to low. Stir in sun-dried tomatoes, grated Parmesan cheese, and fresh basil.

7. Serve garnished with additional Parmesan cheese, chili flakes, and chopped chives.
