Crispy Spicy Potatoes

*Ingredients* 

8-12 yellow potatoes (preferably small-medium size)

3 garlic cloves- minced 

1 teaspoon paprika

1 tbsp. aleppo pepper

1/4 cup salt

1 teaspoon chili oil

4 tbsp olive oil 

Flaky salt

1 tbsp. chopped parsley (optional)

Chili flakes (optional)

Lime Aioli: 

2 tbsp mayonnaise

1 teaspoon lime zest

1 tbsp lime juice

1 tbsp fresh parsley (chopped)


*Instructions*

  1. Bring a pot of water to the boil, add 1/4 cup salt, potatoes and cook for 20-30 minutes (use a fork to make sure the potatoes are soft enough). Once soft, drain and let the potatoes cool down.

  2. Preheat the oven to 400F.

  3. In a bowl mix together garlic, chili oil, paprika, aleppo pepper, olive oil and mix until combined. 

  4. Place the potatoes in a baking sheet. 

  5. With the bottom of a cup or potato masher squish the potatoes gently. The thinner the potatoes the crisper it will be. 

  6. Brush the potatoes with spicy oil mixture.

  7. Place in the oven for 35-50 minutes (depending on how crispy you like it).

  8. Add flaky salt, chilli flakes, parsley and serve. 

Lime Aioli:

  1. In a small bowl mix together mayonnaise, lime juice, lime zest and parsley. 

  2. Mix together until combined.
