Chocolate Lava Cake
*recipe for 2 small cakes in 6oz ramekins (each piece can be good for 1-2 people)
*Ingredients*
200 g 70% dark chocolate
2 cubes white chocolate
2 eggs
2 egg yolks
100 g butter - softened
2 ½ tbsp all purpose flour
1 tbsp cocoa powder
4 ½ tbsp. granulated sugar
pinch of salt
For serving:
-Powdered sugar
- Blueberries and strawberries
*Instructions*
Preheat oven to 430 F
Place the chocolate and butter in a microwave-safe bowl. Heat for 25 seconds at a time then take out of the microwave and stir. Continue until the chocolate is fully melted.
In a baking bowl beat the eggs, egg yolks and sugar for 3 minutes.
Pour the melted chocolate to the baking bowl and fold until combined.
Add 2 tbsp. flour and mix gently until combined.
In a small bowl mix flour and cocoa powder.
Gently spread butter inside the ramekins and then brush the flour and cocoa powder mixture on top of the butter until fully covered.
Pour the batter into the ramekins (fill out just ¾ of the ramekins).
Place one cube of white chocolate on top of each piece and push it into the middle of the cake and cover gently.
Bake for 6 minutes, then reduce the heat to 400 F and bake for another 3-4 minutes.
Gently, place the ramekins upside-down on a plate (each ramekin should have a separate plate).
Top with powdered sugar and serve with blueberries and strawberries.
