Chicken Fajita Tacos
Servings: About 6 tacos
Ingredients:
For the Chicken Fajitas:
1 lb boneless chicken breast, thinly sliced
1 onion, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 tbsp chili powder
½ tbsp paprika
½ tbsp garlic powder
1 tsp ground cumin
1 tbsp dried oregano
½ tbsp onion powder
½ tbsp salt
1 tbsp ground black pepper
¼ cup lime juice
3 tbsp olive oil (divided)
Homemade Salsa:
2 roma tomatoes, halved
2 jalapenos
1 can diced and fire-roasted tomatoes
1 tbsp cumin
Salt and black pepper, to taste
½ cup fresh cilantro
¼ cup lime juice
¼ cup red onion, peeled and quartered
Guacamole:
2 ripe avocados
2 tbsp fresh cilantro, chopped
1 roma tomato, chopped
3 tbsp fresh red onion, chopped
Salt and black pepper, to taste
For Serving:
6 corn or wheat tortillas
2 tbsp. fresh cilantro
2 limes, cut into quarters
Instructions:
Marinate & Cook the Chicken and Vegetables:
1. Place the thinly sliced chicken breast in a bowl.
2. Add the chili powder, paprika, garlic powder, ground cumin, dried oregano, onion powder, salt, black pepper, and 2 tbsp of olive oil.
3. Mix well to ensure the chicken is evenly coated, then let it marinate for at least 30 minutes.
4. Heat 1 tbsp of olive oil in a skillet over medium-high heat.
5. Add the marinated chicken to the skillet, and cook for about 3-4 minutes.
6. Add the sliced onions and bell peppers to the skillet with the chicken.
7. Continue to cook for an additional 5-7 minutes, stirring occasionally, until the vegetables are tender and the chicken is fully cooked.
8. Drizzle with lime juice and give everything a good stir.
Prepare the Salsa:
1. In a blender or food processor, combine the roma tomatoes, jalapenos, canned tomatoes, cumin, salt, black pepper, fresh cilantro, lime juice, and red onion.
2. Pulse until you reach your desired consistency.
3. Taste and adjust seasoning if necessary. Set aside. If too sour, add 1 teaspoon of granulated sugar.
Prepare the Guacamole:
1. In a bowl, mash the ripe avocados.
2. Add the chopped cilantro, roma tomato, red onion, salt, and black pepper.
3. Mix well and set aside.
Assemble the Tacos:
1. Heat a clean skillet over medium-high heat.
2. Warm each tortilla for about 30 seconds on each side or until they are heated through and have a slight char.
3. Spread about 1 tbsp. of guacamole in the center of each tortilla.
4. Top with a generous amount of the chicken and vegetable mixture.
5. Add a spoonful of salsa on top.
6. Garnish with fresh cilantro and a squeeze of lime juice.
Tips:
1. Feel free to adjust the amount of jalapenos according to your preference.
2. Heat the tortillas just before assembling the tacos to ensure they are warm.
