Brioche Avocado Toast

Ingredients:

1 large Hass avocado
2 eggs
1 bowl of ice water
1 tbsp. olive oil
2 slices of bread (I used Brioche)
1 tablespoon green onion- chopped
Salt & pepper
1 teaspoon lime zest (or lemon zest)
1 tbsp. lime juice (or lemon juice)
2 garlic cloves
1 tbsp. white vinegar
1 tbsp. Parmigiano Reggiano
1 teaspoon chili oil

Optional for topping:
Radish and microgreens

Instructions:
1. Fill a medium saucepan with water and bring it to a boil. Add white vinegar and then the eggs. Cook for about 8-9 minutes.

2. Place the eggs in a bowl with iced water for at least 5 minutes.

3. Cut the avocado in half and discard the pit. Using the tip of a paring knife, score the avocado flesh into medium squares.

4. Place garlic cloves in mortar and pestle, and smash the garlic until it’s minced.

5. Add avocado, salt, and pepper and smash it together with the garlic.

6. Add lime zest, lime juice, green onion, Parmigiano Reggiano, and mix.

7. Lightly toast the bread with olive oil.

8. Spread the avocado on top of your toast.

9. Remove the egg shells and cut the eggs into halves.

10. Place 2 halves on top of the avocado, and add chili oil, salt, and black pepper.

11. Serve with radish and microgreens.
