Beef Tenderloin Steak with Mushroom Orzo

This Beef Tenderloin Steak with Mushroom Orzo is easily one of my first choices for a comforting meal that still feels special. The tender steak pairs perfectly with the earthy mushroom orzo, creating an incredible combination that’s both hearty and satisfying.

Ingredients:

For the Steak:

2 center-cut beef tenderloin steaks

2 sprigs of rosemary

3 garlic cloves

Kosher salt, to taste

Ground black pepper, to taste

For the Mushroom Orzo:

1 shallot, finely chopped

2 garlic cloves, minced

3 tbsp olive oil

1/2 lb assorted mushrooms, sliced (such as white, portobello, and cremini)

1/4 cup white wine

3/4 cup coconut cream (or heavy cream)

1/2 cup beef or mushroom stock

1 cup orzo

Salt and black pepper, to taste

1 tbsp chopped chives

For the Herb Sauce:

1/3 cup olive oil

1 1/2 tbsp red wine vinegar

1/3 cup fresh parsley, finely chopped

1 small red chili, chopped

1 teaspoon salt

Ground black pepper, to taste

1 garlic clove, minced

2 tbsp fresh oregano, chopped

Instructions:

  1. Season both sides of the steaks generously with salt and pepper. Set aside.

  2. For the Herb Sauce: Combine olive oil, vinegar, parsley, chili, salt, black pepper, minced garlic, and oregano in a bowl. Mix well.

  3. For the Mushroom Orzo: Heat olive oil in a saucepan over medium heat. Sauté the shallot for about 1-2 minutes. Add mushrooms and season with salt and black pepper. Cook until they begin to brown. Add white wine and minced garlic, then add orzo and mix well. Add stock and coconut cream. Cook until the orzo is tender and the sauce has thickened. Once most of the liquid has evaporated, lower the heat to minimum, and cover the saucepan with a lid.

  4. Preheat the oven to 360°F.

  5. In a skillet, add garlic and cook the steaks for about 2 minutes per side. Halfway through, add rosemary. Remove the garlic and rosemary, and transfer the steaks to a baking pan. Place in the oven for 2-8 minutes, depending on your preferred doneness.

  6. Cut the beef into slices.

  7. Sprinkle chives on top of the orzo, then top with the sliced beef. Drizzle with the herb sauce.
